This bill requires that all new or renewed contracts for food service establishments in buildings owned, operated, or leased by the state or the State University of New York (SUNY) include provisions to prevent the cross-contamination of gluten-free foods by gluten-containing foods. It also directs the Commissioners of Health and Education to jointly promulgate regulations specifying reasonable methods to avoid such cross-contamination in cafeterias, restaurants, and other food establishments operated by vendors or contractors on state or SUNY properties. The bill aims to ensure that individuals with gluten sensitivities or celiac disease have safe dining options when patronizing state-affiliated food establishments.
