This bill enhances food allergen awareness in Vermont food service establishments by introducing several key requirements. The bill acknowledges the significant health risks of food allergies, noting that approximately 26 million adults and 6 million children in the United States have potentially life-threatening food allergies, with food-related allergic reactions causing between 150-200 deaths annually. The legislation mandates that food service establishments designate specific employees as "food safety officers" who must complete an online food allergen training program at intervals determined by the Commissioner. These officers will be responsible for understanding food allergy protocols and must be present during the establishment's operating hours. The bill also requires establishments to post comprehensive signage in public and food preparation areas that lists major food allergens (including milk, eggs, fish, shellfish, tree nuts, wheat, peanuts, sesame, and soybeans), identifies allergic reaction symptoms, explains actions to take during an allergic emergency, and instructs customers to disclose food allergies. Additionally, menus must include a request for customers to inform staff about known food allergies. The training and signage requirements aim to improve food safety and reduce the risk of severe allergic reactions in restaurants and food service settings, with implementation set to begin on July 1, 2025.
