This bill requires that food allergy awareness training for employees of restaurants, defined as businesses primarily selling ready-to-eat food prepared on-site with seating for guests, must now include and assess knowledge about gluten as a food allergen. This expanded training will cover the sources of gluten, the symptoms associated with gluten intolerance and celiac disease, the critical importance of preparing and handling gluten-free foods correctly, and the proper cleaning procedures necessary to prevent gluten contamination. The bill will become effective on July 1, 2026.
