This resolution celebrates November 22nd as Kimchi Day, recognizing the traditional Korean dish's over 2,000-year history, its preparation process known as "Kimjang" which is recognized by the United Nations Educational, Scientific, and Cultural Organization (UNESCO) as an Intangible Cultural Heritage of Humanity, and its growing popularity in the United States as a healthy food staple rich in nutrients and beneficial for reducing the risk of certain diseases. The resolution also acknowledges the cultural exchange represented by kimchi's increasing presence in American markets and menus, notes that South Korea celebrates National Kimchi Day on November 22nd to highlight the dish's ingredients and health benefits, and specifically recognizes the significant contributions of Washington state's Korean American community, which has the fifth highest concentration of Korean Americans in the U.S., to the state's diverse culture.
